Spicy and cheesy jalapeño poppers wrapped in bacon, perfect for parties and game days.

  • 12 large jalapeños
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 12 slices bacon, cut in half

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut the jalapeños in half lengthwise. Remove the seeds and membranes. Wear gloves to avoid skin irritation.
  3. In a medium bowl, combine the softened cream cheese, cheddar cheese, Monterey Jack cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  4. Spoon the cheese mixture into each jalapeño half.
  5. Wrap each stuffed jalapeño half with a half-slice of bacon. Secure with a toothpick if needed.
  6. Place the poppers on the prepared baking sheet.
  7. Bake for 20-25 minutes, or until the bacon is crispy and the jalapeños are tender.
  8. For an air fryer, cook at 375°F (190°C) for 12-15 minutes, flipping halfway through, until bacon is crisp.

Notes

  • To reduce the heat of the jalapeños, remove all seeds and membranes. Soaking the jalapeño halves in cold water for 30 minutes before stuffing can also help.
  • You can prepare the poppers up to a day in advance. Store them covered in the refrigerator before baking.
  • Serve with your favorite dipping sauce, such as ranch or a spicy aioli.
