- 2 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 cup diced apples
- 1/4 cup chopped walnuts or pecans (optional)
- 1 tablespoon chia seeds (optional)
- 1 scoop protein powder (optional)
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- In a large bowl, whisk together the rolled oats, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the eggs, milk, maple syrup or honey, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the diced apples, nuts, chia seeds, and protein powder if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until the center is set and the top is golden brown.
- Let cool slightly before serving.
Notes
- For rolled oats, use old-fashioned rolled oats for the best texture. Steel-cut oats will require a longer cooking time and may need to be pre-cooked.
- You can adjust the sweetener to your preference.
- Add other mix-ins like dried cranberries or shredded coconut.
- This bake can be stored in the refrigerator for up to 4 days. Reheat individual portions in the microwave or oven.
- For single-serve portions, divide the batter into greased muffin tins and bake for 20-25 minutes.
