1 cup sweetened condensed milk
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/2 cups sweetened flaked coconut
1 cup semi-sweet chocolate chips
1/2 cup chopped almonds, plus extra for topping
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, combine the sweetened condensed milk, vanilla extract, and almond extract. Mix until smooth.
Stir in the flaked coconut, chocolate chips, and chopped almonds until everything is evenly coated.
Drop rounded tablespoons of the mixture onto the prepared baking sheets, spacing them about 2 inches apart.
Press one or two extra chopped almonds onto the top of each cookie mound.
Bake for 10 to 12 minutes, or until the edges are lightly golden brown. The centers will still look soft.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a richer chocolate flavor, you can melt 1/2 cup of semi-sweet chocolate and drizzle it over the cooled cookies.
If you prefer a firmer cookie, bake for an additional 1 to 2 minutes, watching carefully to prevent burning.
