  • 1/4 cup grated Parmesan cheese

  1. Wash and trim the ends off the zucchini. Cut the zucchini lengthwise into sticks, aiming for a fry shape (about 1/4 to 1/2 inch thick).
  2. Place the zucchini sticks in a colander. Sprinkle with 1/2 teaspoon of salt and let them sit for 10 minutes. This draws out excess moisture, which is key for crispiness.
  3. Pat the zucchini sticks completely dry using paper towels. This step is important to prevent sogginess.
  4. In a medium bowl, toss the dried zucchini sticks with the olive oil until lightly coated.
  5. In a small bowl, mix the grated Parmesan cheese, garlic powder, remaining salt, and black pepper.
  6. Sprinkle the Parmesan mixture over the oiled zucchini and toss gently until the sticks are evenly coated.
  7. Preheat your air fryer to 380°F (195°C).
  8. Place the zucchini fries in a single layer in the air fryer basket. Work in batches if necessary to avoid overcrowding, as this prevents proper air circulation and crisping.
  9. Air fry for 10 to 14 minutes, shaking the basket halfway through the cooking time, until the zucchini is golden brown and crispy.
  10. Remove immediately and serve hot as a healthy air fryer snack or side dish.
