Make crispy, low-carb zucchini fries in your air fryer. This simple recipe delivers a tender interior and a golden, cheesy exterior perfect for a quick side dish or snack.

  • 2 medium zucchini
  • 1 tablespoon olive oil
  • 1/4 cup all-purpose flour or almond flour for keto option
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Wash and trim the ends of the zucchini. Cut the zucchini lengthwise into quarters, then cut each quarter into sticks about 3 inches long (fries shape).
  2. Pat the zucchini sticks completely dry with paper towels. This step is crucial to prevent sogginess.
  3. Set up a dredging station with three shallow bowls. In the first bowl, place the flour. In the second bowl, place the beaten egg. In the third bowl, combine the grated Parmesan cheese, garlic powder, salt, and pepper.
  4. Dredge each zucchini stick first in the flour, shaking off any excess.
  5. Dip the floured stick into the egg, letting excess drip off.
  6. Finally, press the stick firmly into the Parmesan mixture until it is well coated. Place the coated sticks on a plate.
  7. Preheat your air fryer to 400°F (200°C) for 5 minutes.
  8. Lightly spray the air fryer basket with cooking spray. Arrange the zucchini sticks in a single layer in the basket, working in batches if necessary. Do not overcrowd the basket.
  9. Air fry for 8 to 10 minutes, flipping the sticks halfway through the cooking time, until the coating is golden brown and crispy.
  10. Serve immediately for the best texture.

  • For the crispiest results, ensure the zucchini is very dry before coating.
  • If you are making a large batch, keep the cooked fries warm in a 200°F oven while you finish the remaining batches.
