  • 1 lb zucchini, cut into 1/4-inch thick sticks
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten
  • Cooking spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a shallow bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Dip each zucchini stick into the beaten egg, letting any excess drip off.
  4. Dredge the egg-coated zucchini sticks in the panko mixture, ensuring they are evenly coated.
  5. Arrange the coated zucchini sticks in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
  6. Lightly spray the zucchini fries with cooking spray.
  7. Air fry for 8-12 minutes, flipping halfway through, until golden brown and crispy.
  8. Serve immediately with your favorite dipping sauce.
